Longevity Salad Series: Shiitake, Goat's Cheese & Arugula Salad | Oxford Healthspan

Healthy and delicious! This shiitake mushroom, goat's cheese and arugula dish is not only packed with flavor, but also high in spermidine - a natural compound that helps promote healthy aging. It does this by inducing autophagy, your body's cellular "clean up" process that slows with age.

Topped with toasted walnuts and creamy goat’s cheese, it’s the perfect balance of taste and nutrition.

Ingredients:

  • 1/2 cup walnuts
  • 2 tablespoons olive oil
  • 230 grams of shiitake mushrooms
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 1/2 cup dried cranberries
  • ½ cup cooked beetroot
  • ⅓ cup of goat’s cheese
  • 2 tablespoons balsamic vinegar
  • 6 cups arugula

Optional:

2 x capsules of Primeadine Original, sprinkled on top

Method:

1: Toast walnuts in a skillet over medium heat for about 2 minutes until fragrant.
2: Sauté shiitake mushrooms until browned and add salt and pepper.
3: Add in the cranberries and balsamic vinegar.
4: Add the arugula to the pan and cook until lightly wilted and warm.
5: Serve and top with roasted walnuts and goat’s cheese.
6. Open up the Primeadine Original capsules & sprinkle on top.
