Pancakes have never been particularly associated with longevity. Until now. These matcha longevity pancakes are everything a weekend morning should be: indulgent enough to feel like a treat, nourishing enough to know you are doing something genuinely good for yourself. Earthy matcha, creamy coconut milk, and a jewel-bright blueberry compote that you will want to put on everything.

Ingredients
For the pancakes:
- 1 1/4 cups oats, blended into flour
- 1/4 cup Nuzest protein greens powder, or your favourite greens powder
- 2 1/2 tbsp matcha powder
- 1 tsp baking powder
- 4 level scoops Primeadine GF powder
- 1 tsp vanilla extract
- 2 tbsp maple syrup
- 3/4 cup Plenish coconut milk
- 1 tbsp (15g) grass-fed butter, for frying
For the blueberry compote:
- 1 1/2 cups fresh or frozen blueberries
- 1/4 cup maple syrup
- 1 tbsp water
- 1 tbsp freshly squeezed lemon juice
- 1/4 tsp vanilla extract
Serves: 2
Method
Start with the compote. Add one cup of the blueberries to a small saucepan with the maple syrup, water, lemon juice and vanilla. Simmer over a medium heat for 10 minutes, stirring occasionally, until the berries begin to break down and the liquid thickens into something glossy and rich.
Add the remaining blueberries and simmer for another 10 minutes. Remove from the heat and set aside to cool and thicken further. The compote will keep in the fridge for up to five days, so make extra if you can.
For the pancakes, blend your oats until they reach a fine flour-like consistency, then add to a large mixing bowl along with the matcha, baking powder, greens powder and Primeadine GF. Give the dry ingredients a good stir to combine.
In a separate bowl, whisk together the coconut milk, maple syrup and vanilla extract. Pour the wet ingredients into the dry and whisk well until you have a smooth, lump-free batter. Let it rest for two to three minutes while your pan heats up.
Melt the grass-fed butter in a frying pan over a medium-high heat. Add your desired amount of batter and cook for two to three minutes, until bubbles begin to form across the surface. Flip and cook for a further two minutes until golden. Repeat until all the batter is used.
Stack generously, spoon over the compote, serve immediately.
